Soak the gelatin sheets in cold water. Squeeze the oranges and lemons, gather the juice in a saucepan, add the sugar and melt gently. Wring the gelatin sheets and add to the pan. Stir and bring to a boil. When bubbling, take off the heat and put through a fine mesh sieve. Wash and stem the strawberries, save a few for decoration. Blend the strawberries in a mixer. Mix the strawberry purÄe to the jelly. Leave to cool a little, pour into a ring mold and refrigerate for 12 hours. Unmold and decorate the center of the ring with the strawberries set aside.
